BOK CHOY
BOK CHOY COLESLAW

INGREDIENTS

4 C. thinly sliced bok choy
1 grated carrot (a big one)
1 1/2 cups of snow peas
2 tlb. rice vinegar
2tlb vegetable oil
1 tablespoon of soy sauce
2 or 3 tsp of fresh ginger (fresh)
1 tlb of sesame oil
1 tsp sugar

METHOD

1. Slice bok choy into thin slices
2. Grate the carrot
3. Slice the snow peas in lengthwise slices.
4. Mix the above ingredients with the ingredients.
5. Salt a nd remaining pepper to taste.
6. Coleslaw is generally best if allowed to set for an hour or more.

Serves 4

BOK CHOY CHICKEN SALAD

INGREDIENTS

5 cups of chopped bok choy
2 T dark sesame oil
1 T peanut oil
1/3 cup rice wine vinegar
2 t. sugar
1 lb of cooked shredded chicken
1 large carrot
4 T of chopped cilantro
5 sliced scallions
1/3 cup chopped roasted peanuts

METHOD

1. Combine the oils, sugar and vinegar.
2. In large bowl toss bok choy, chicken, grated carrot, scallions peanuts and cilantro.
3. Pour oils and vinegar mixture over salad and toss.

1. Try snacking on bok choy like celery
